6 O'CLOCK Brews

Well, a big thank you to all those people who bought Bronzed Brews. The feedback received has been very gratifying.

The publication of Bronzed Brews – Home Brewing Old Australian Beers in late 2015, was arguably the first time Australian historical beer recreations had been documented. My research focused on discovering and using primary sources - mainly actual production records to derive the recipes.

During the editing of Bronzed Brews a lot of content, including some of my favourite bits, ended up on the cutting room floor because of incomplete information. I’m ruthless when editing!

6 O’CLOCK Brews - Brewing More Old Australian Beers.

6 O’CLOCK Brews is a continuation, extension and amplification of Bronzed Brews, (which covered the history of Australian brewing, ingredients and processes from the early 19th century to the 1970s, it includes 55 recreation recipes.) Now after lots more research, including delving into heaps more mouldy brewing books, are more stories from the past and of course even more (54) old recreation recipes.

I located old brewing records from Tasmania, Western Australia, N.S.W. and South Australia, plus some from the U.K.

After being granted the rare privilege of access to Cooper’s Brewery archives, I am especially pleased to be able to document the evolution of Cooper’s beers over 100 years or so.
